Oscars goes vegan Wolfgang Puck kocht für die Stars

«Das ist 100 Prozent vegan», versichert der gebürtige Österreicher. Dabei rührt er eine Paste aus Blumenkohl-Püree unter ein Risotto aus schwarzem Reis. «Eines meiner Lieblingsgerichte, ganz ohne Butter oder Sahne», sagt Puck mit einem Augenzwinkern.

Damit scheint er den Geschmacksnerv in Hollywood genau zu treffen. «Der Joaquin isst nur vegan, und dem Leonardo habe ich neulich eine Pizza nur mit Gemüse gemacht, der war völlig begeistert», plaudert Puck über die beiden Oscar-Anwärter Phoenix und die DiCaprio aus.

Bis Sonntag geht es in der provisorischen Küche gleich neben dem Dolby-Ballsaal rund. Nach der Oscar-Gala richtet der Promi-Koch beim Governors Ball sein traditionelles Gourmetgelage für 1500 Gäste aus, diesmal zu 70 Prozent vegan, so die Vorgabe der Filmakademie. Die Golden Globes machten im Januar den Anfang - da war das Menü für die Stars gänzlich ohne Tierprodukte.

Mehr als 30 verschiedene kleine Happen kreiert der Hollywood-Kärntner, darunter vegane Pasta mit Trüffeln und Süßkartoffel-Tempura, aber auch Deftiges. «Nach der Oscar-Show sind die Leut' alle enorm hungrig und fragen nach meinen Traditionsgerichten, wie Mini-Burger und Chicken Pot Pie», grinst der Koch.

Aus Japan hat er das feinste Wagyu-Rindfleisch besorgt, und aus seiner Heimat stammt das «Backhendl»-Rezept. Das in Buttermilch marinierte Hühnerfleisch wird mit Honig knusprig gebraten und dann «nach amerikanischer Art» auf einer Waffel mit Ahornsirup serviert.

Für die Verköstigung der frisch gekürten Preisträger, Nominierten und Show-Mitwirkenden ist kein Aufwand zuviel. Tausende Wildlachsstreifen werden genau in Form der Oscar-Trophäe zurechtgeschnitten und mit Kaviar auf Kräckern als Appetizer gereicht.

Natürlich gibt es auch wieder süße Trostpreise. Bis Sonntagabend werden 5000 Schokoladen-Oscars mit essbarem Gold bestäubt. Seit einer Woche würden sie täglich an den Mini-Trophäen arbeiten, sagt Puck. «Wer keinen Preis gewinnt, der kriegt auf jeden Fall einen Oscar von mir.» dpa
